Hi, I'm a Mennonite from Germany and I've just read about the Dutch guy who was contacting Dale and Ed to finally got some of this special wheat back to it's origins in the Netherlands. The whole story thrilled me since my grandfather, who had passed away befor my birth, was not only a Mennonite but also a baker and my grandmother grew up on a farm. Now I'd really like to taste that flour and bake my own bread with it.

I've given this a go a couple of times, pretty good stuff

You really can use thicker slices of tofu. You don't get a chewy center doing it that thin. And as someone else mentioned, Don't use hot water for the rice paper. Lukewarm water for a moment is enough, it doesn't feel soft immediately but it will continue getting softer even out of the water.

Do the hollandaise over a double boiler. If you swirl the water and add a little bit of vinegar the egg stays together better.

Raw eggs, too much lemon juice, poached egg undercooked.. 0/10
